Whole Wheat Blinis

A Touch of Class, Without Breaking The Budget

One of the things that I love to do is entertain! I love to have little appetizers or canapés to ensure that my friends and family are taken care of while the main meal is being prepared. These Blinis could be made in huge batches and enjoyed with various toppings, from smoked salmon and lax, to caviar or fish roe. The possibilities are endless!

Level: Easy > Prep Time: 20 Min > Cooking Time: 20 Min > Yield: 15 Pancakes

Ingredients:

1/3 Cups Whole Wheat Flour
2/3 Cups All-Purpose Flour
1/2 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Large Egg
3/4 Cup of warm Milk
1 Stick of Butter (10 tablespoons)

Toppings:
1 boiled Egg (finely chopped)
1/2 pound Smoked Salmon or Lax
Creme Fraiche or Sour Cream
Copped Dill
Chopped Sour Gherkins (Cornichons)

Directions:

  1. Combine the Whole Wheat Flour and All-Purpose Flour in a bowl with the Baking Powder and salt. In a separate bowl you will need to whisk together the Egg, 3 - 4 tablespoon of Butter, and the warm Milk. Once thoroughly whisked, add it to the dry ingredients and combine.

  2. Just like pancakes, heat a little butter in a skillet or pan, then spoon or ladle the mixture into the pan. You are looking to have 3 inch circle pancakes. Cook over medium-low heat for 3 minutes per side, or until you see bubbles. Then flip and cook on the other end for a minute, then remove from the skillet/pan.

To Assemble and serve:
Place on the blini a dollop of Creme Fraiche. You have the option of Smoked Salmon or caviar, and add toppings as you feel.
